Classic Vegetable Biryani with Basmati Rice

Ingredients:
- 2 cups basmati rice (soaked 30 mins)
- 1 cup mixed vegetables (peas, carrots, beans, cauliflower)
- 2 onions (sliced)
- 2 tomatoes (chopped)
- 1 tsp ginger-garlic paste
- 1 tsp turmeric powder
- 1 tsp garam masala
- 2 tsp biryani masala
- 2 tbsp ghee
- Salt to taste
- Fresh coriander and mint leaves
Instructions:
- Cook rice 70% and keep aside.
- In a pan, heat ghee, fry onions until golden.
- Add ginger-garlic paste, tomatoes, spices, and vegetables. Cook until veggies soften.
- Layer half-cooked rice and vegetable masala in a pot, garnish with coriander and mint.
- Cover and cook on low flame for 20 minutes.
- Serve hot with raita.
