Classic Vegetable Biryani with Basmati Rice

Ingredients:

  • 2 cups basmati rice (soaked 30 mins)
  • 1 cup mixed vegetables (peas, carrots, beans, cauliflower)
  • 2 onions (sliced)
  • 2 tomatoes (chopped)
  • 1 tsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 2 tsp biryani masala
  • 2 tbsp ghee
  • Salt to taste
  • Fresh coriander and mint leaves

Instructions:

  1. Cook rice 70% and keep aside.
  2. In a pan, heat ghee, fry onions until golden.
  3. Add ginger-garlic paste, tomatoes, spices, and vegetables. Cook until veggies soften.
  4. Layer half-cooked rice and vegetable masala in a pot, garnish with coriander and mint.
  5. Cover and cook on low flame for 20 minutes.
  6. Serve hot with raita.
